Short ribs are a cut of beef taken from the brisket, chuck, plate, or rib areas of beef cattle. They consist of a short portion of the rib bone, which is overlain by meat which varies in thickness.

130 beef chuck short ribs originate from the mid-section of ribs 2 through 5.  For barbecue, these would typically be referred to as “4-bone beef ribs”.  The major muscle in chuck short ribs is the Serratus Ventralis muscle which may contain a great deal of marbling (deposits of fat within the muscle).  The rib bones are typically smaller and more rounded from this area of the beef carcass.
