Live Lobster! But what is the best part of the lobster? Mild and sweet, lobster meat is firm and somewhat fibrous. The tail meat is firmer than the meat from the claws. For some, the lobster tail meat is the best part of the lobster, but others really enjoy pulling the meat out of the claws and savoring the legs.

Thawing
Let the frozen lobster thaw in the refrigerator 24 hours before cooking. Cooking un-thawed tails will result in tough meat. Lobster will thaw faster if placed in a plastic bag and immersed in water while in the refrigerator. If you a really in a rush to thaw the frozen lobster tails, you can use a microwave with a defrost setting to thaw the tails. Just be careful so that you don't start cooking the Lobster tails this way. After thawing, the lobster tails can be boiled, steamed, baked, broiled, or grilled.

Cooking
Preheat the broiler
Place lobster tails on a baking sheet. With a sharp knife or kitchen shears, carefully cut top side of lobster shells lengthwise
Pull apart shells slightly, and season meat with equal amounts butter, paprika, salt, and white pepper
Broil lobster tails until lightly browned and lobster meat is opaque, about 5 to 10 minutes. Garnish with lemon wedges to serve
