Isomalt is an ‘inverted sugar’, meaning that it is sweet like sugar, but has a slower rate of crystallisation. This makes isomalt sugar a great ingredient for ice cream making. The colourless, odourless ingredient derived from beetroot has many other uses though –, particularly in molecular gastronomy and confectionary.

Use it for savoury, dehydrated meringues, croquants and tuiles. Also use the powder for sculpting intricate cake decorations, and as the base for toffee-like hard sweets
